Duck broth is not difficult to prepare, and there are many benefits from it (at least that's what they say in many sources). The ready-made broth can be used as an independent dish, or you can use it to cook some other dishes (various soups, sauces, stewed vegetables, etc.).
To cook duck broth, we need the ingredients from the list. I used the dorsal part of the duck, as well as the wings without skin, because there is a lot of fat in the skin and it's better not to use it for broth. Well, if you do decide to use leather, then be prepared that your broth will be very, very oily)))
Put the bones in a saucepan and fill them with cold water. We place the pan on the stove, turn on the maximum fire and wait for the water to boil.
After the water boils, a dark foam will appear on its surface, which must be removed with a slotted spoon.
Then put onions, carrots, garlic and dill in water. Cook the broth over low heat for about 1-1.5 hours.
15 minutes before the end of cooking, salt, pepper and bay leaf must be put in the broth.
When the duck broth is cooked, you need to get the vegetables and meat out of it.
And then with the help of gauze we filter the broth. It is better to fold gauze in two layers.
