I don't know about you, but I just love Georgian cuisine, although I am not a representative of this people. For the preparation of most Georgian dishes, seasonings and herbs are used, which makes them spicy and aromatic, and Kharcho soup, which is a traditional national dish of Georgia, is no exception. The classic Kharcho soup is prepared on the basis of lamb or beef broth; I decided to try to cook it from lighter chicken meat. I must say right away that the soup turned out to be very tasty and aromatic, so I recommend everyone to try it.
Wash the chicken and cut into medium sized pieces.
Chop the onions finely.
Pour a pot of water and add the chicken. In the process of boiling the chicken, remove the resulting foam. When the broth is clean, add finely chopped onion to it and leave to simmer over low heat.
While the broth is boiling, we will start dressing for the kharcho. Sprinkle the tomatoes with boiling water, peel and chop finely. Heat vegetable oil in a frying pan, put tomatoes and walnuts. Stir and lightly fry for just 5 minutes.
Add finely chopped dill, cilantro and garlic. Mix everything and simmer for about 5 minutes.
Rinse the rice with cool water and add to the pan to the vegetables. Pour in 2 ladles of broth from a saucepan, mix everything and leave to simmer under the lid for 10 minutes.
Combine the stewed vegetables and broth in a saucepan, add 1 tablespoon of tomato paste and flour, mix thoroughly. Cover the saucepan with a lid and let it simmer for another 5 minutes.
