Rich duck broth is an ideal dish for the winter cold, when you really want to warm up. It can be poured into containers and frozen.


Duck (parts) - 400 g

The fattest and richest broth is obtained from duck. Friends from the village often give me such gifts, so I use them to create blanks for future dishes. For example, I cut off all the fatty parts from a poultry and boil them for broth. Then, after cooling down, I pour the broth into containers or plastic containers with a lid and freeze. To create a soup, I will need one such container with ready-made duck broth, and in fatty duck broth you can cook not only the first courses, but also the second ones, bake potatoes and other vegetables, pasta, and so on in it. Such blanks are very helpful when there is little free time.

Optionally, you can collect the fat from the surface of the duck broth, and add chopped boiled chicken eggs to it and serve with savory pastries. Garlic croutons, croutons and toasts are insanely delicious with such a dish!

So, get the ingredients you need ready and start cooking!

Put all the washed parts of the duck in a deep saucepan. Many people also boil duck legs, but I refused them. Place bay leaves in a saucepan, add black peppercorns and salt.

Pour in warm water and place the container on the stove. Bring to a boil and be sure to remove the foam that forms with a slotted spoon. If desired, you can add fresh dill, celery or parsley to the broth, but remember that it will change its color to light green. Reduce heat to medium, cover the container with a lid and simmer the broth for about 2 hours so that all the fat is properly melted from all parts.

The volume of water will be halved, but there will be a lot of fat!

Pour the prepared fatty duck broth into deep bowls and serve if you like rich dishes. Or cool and pour into molds, freeze. By the way, homemade noodles boiled in such broth are especially tasty!
