A pleasant refreshing summer beetroot soup on ayran.
Ingredients
Ayran - 1 glass per serving
Potatoes - 2 pcs.
Beets - 2 pcs.
Eggs - 3 pcs.
Radish - 2 pcs.
Boiled meat - 100 g
Cucumbers - 3 pcs.
Sour cream - 1 tbsp. per serving
Garlic - 1 clove
Green onions - 10 g
Dill greens - 10 g

Have you ever tried cold borscht on ayran? If not, I highly recommend doing it! A great alternative to our usual okroshka.
This refreshing summer soup is based on fresh cucumbers, beets, eggs and herbs - you can add the rest to your taste. You can cook borscht on ayran without meat and potatoes, but with them it turns out more satisfying, especially this option suits men.
Adding garlic is an unusual option for me, but if you think about it: it's borscht! And everything falls into place at once.
You can use any meat, even sausage, I took a boiled turkey.
Prepare foods on the list. It is convenient to cook vegetables in advance and refrigerate.
Cut the cucumber and boiled beets into small cubes.
Place the vegetables in a saucepan to make the borscht mixture.
Using an egg slicer, chop the eggs (or in the usual way), cut the boiled meat and potatoes into the same small cubes.
Add everything to the pot.
Chop green onions and dill finely, cut radishes into slices. Crush a clove of garlic and add to the mixture as well. Now the borscht base is ready, it remains only to dilute it with ayran to taste and add sour cream.
Spread the borscht base on plates, add sour cream. There is no need to put salt, because ayran itself is salty.
Pour in ayran, stir. That's it, our refreshing cold ayran borsch is ready!
