We usually cook classic pickle with rice or barley. Pickle with buckwheat is a less common, but also quite acceptable option for making soup with cucumbers. Today I will take pickled cucumbers, but you can also use pickled ones. I will cook the pickle on pork, but other meat can be used for the broth - beef, veal, chicken, both with and without bones.
Pickle with buckwheat on pork is good because it cooks faster than a similar soup with barley - this is certainly a plus. Yes, and pork boils faster than, for example, beef. So with these ingredients, the soup is more advantageous in terms of ease of preparation.
Well, let's figure out how to cook pickle with buckwheat and pickles …
Let's prepare the ingredients. Peel the potatoes, carrots and onions.
Let's start by making the broth, for which we will cut the pork into small pieces.
Put the meat in a saucepan with water, add a little salt, put on fire, bring to a boil, collect the foam and cook for an hour under the lid.
In the meantime, the pork is cooking, prepare the rest of the ingredients. Grate the carrots and finely chop the onion.
Grate cucumbers on a coarse grater, simmer for 10 minutes in a little water.
Put the carrots and onions in a frying pan, fry in vegetable oil.
When the pork is boiled until soft, add potatoes, sautéed and buckwheat, washed several times to the pan. Put on fire again and cook for 20 minutes until the potatoes are ready.
Let's add the cucumbers along with the water in which they were stewed. Boil for 7 minutes.
Add bay leaf to the finished soup, add a little pepper, taste the soup, add salt if necessary.
Pickle with buckwheat is ready. You can serve it with herbs, sour cream, or just like that.
