Delicious, aromatic and healthy dietary rabbit meat soup with canned chickpeas and fresh wild garlic (and other vegetables, of course).
Ingredients
Rabbit - 400 g
Potatoes - 200 g
Onions - 40 g
Carrots - 1 pc.
Canned chickpeas - 200 g
Celery - 1 stalk
Tomato - 100 g
Ramson - 40 g
Salt to taste
Ch.m. pepper - taste
Parsley - a couple of twigs

Prepare foods for making rabbit soup with chickpeas and wild garlic. Peel the onions, carrots and potatoes, wash together with the rabbit and other vegetables under running water.
Pour the rabbit pieces with plenty of water, after boiling, collect the foam, cook under a lid over low heat for 30 minutes.
You can put onions together with the rabbit, then it will boil well and will not be visible in the finished dish. After 30 minutes, add the carrots, cook for 5 minutes.
Place the potatoes cut into small cubes in the soup and cook for another 10 minutes. Pick up foam from time to time.
Chop celery, wild garlic, tomatoes finely, transfer to a saucepan with chickpeas. Cook the soup for 10 minutes maximum. Season with salt and pepper to taste.
Pour the chopped fresh herbs last, stir the soup, turn off the stove. Cover the pan with a lid, leave to brew for 10-15 minutes.
Pour the prepared rabbit soup with chickpeas and wild garlic into portions and serve. You can put a spoonful of sour cream in each plate.
