A fragrant, hearty, delicious first course with smoked pork ribs. And green dried peas make the soup look very unusual.

Ingredients

Split green peas - 1 glass

Smoked pork ribs - 250 g

Potatoes - 300 g

Bulb onions - 1 pc.

Carrots - 1 pc.

Lean oil - 1 tbsp.

Salt and pepper to taste

Fresh greens - a few twigs

Garlic - 1 clove

Tomato sauce - 2 tablespoons

Water - 1.5 l

Step by step recipe with photo

Prepare all the ingredients you need for the Smoked Ribs Pea Soup. Rinse the peas, soak in advance for a couple of hours in cold water. Peel the onions, carrots, garlic and potatoes, wash under running water together with herbs.

Transfer the peas to a saucepan, rinse a few more times, cover with clean cold water. Cook over moderate heat for 30-40 minutes, until half cooked. If you add a little baking soda to the water, the peas will cook much faster. Collect foam from the water surface from time to time.

Cut the smoked ribs, transfer to a saucepan, cook for another 20 minutes. Leave the ribs on the bone as they are, and the ones on the cartilage can be cut into smaller pieces.

Heat some lean refined oil in a frying pan, put finely chopped onions and carrots grated on a coarse grater into it. Fry over medium heat for 5 minutes, until soft.

Pour potatoes into the soup after the ribs, cook for 10 minutes.

Transfer the onion and carrot roast to a saucepan, add water to the top, cook for another 10 minutes.

Season with salt and pepper the pea soup to taste, add chopped garlic and tomato sauce from your favorite manufacturer, and you can add bay leaves if you wish. Cook for a few more minutes. Add chopped fresh herbs, stir the soup, turn off the stove. Leave under the lid for 10-15 minutes.

Green split pea soup with smoked ribs is ready. Pour into portions and serve.
