Let's prepare the ingredients for a lentil and bacon soup.
Bring water to a boil, add lentils to it and start the countdown. It should take 45 minutes from boiling to readiness.
Cut the potatoes into not too large cubes, add them to the lentils.
We cut the bacon as needed. No difference at all. It is accepted differently in different families.
We begin to fry the bacon over high heat, it should brown and give fat.
Cut the carrots into rather large cubes (or small washers, if the carrot is thin). In short, the main thing is not to be petty. Its chunks in the soup must be visible to the naked eye.
We cut the onion as you like.
When the fat has melted from the bacon, add the carrots and onions to the pan. We reduce the heat and fry them to the desired degree of readiness (at least until the onion is transparent, then until brown).
After 30 minutes from the beginning of cooking the lentils in boiling water, add the fry with bacon.
Cook the soup for another 15 minutes, salt (if necessary, and it depends on the bacon) at the very end.
Honestly, the parsley here is purely for beauty, lentil soup with bacon is eaten without fresh herbs.
But sometimes it is flavored with additional sour cream or cream.
Important additions to the recipe
Lentil soup with bacon is found in the cuisine of various European nations, because its ingredients are simple and famous for centuries. Actually, only potatoes were added from the post-Columbian products. And everything else has grown (or grunt) for a long time and everywhere. In Germany, this recipe is so popular and popular that it is sold even in tin cans.
-
Add the bacon to the sausage. Not replace, but supplement!
Bacon is an essential component of this stew (it is thick), it creates a characteristic aroma and flavor composition. And although my child does not eat this product, preferring sausage to him, I still cook lentil soup with bacon, and add sausage or sausages additionally. As the spouse formulated his position on this issue: “Without bacon, it’s some kind of nonsense,” and I agree with him, because I tried both options.
- Whether the soup needs to be salted depends on the salinity of the bacon.
- If you like sour, you can drip a little vinegar at the end of cooking.
