Prepare the ingredients for Greek Meatball Soup from the list.

Place the minced meat in a deep bowl, season with salt and pepper. I have minced beef. Finely chop one onion and add it to the minced meat, mix.

Add the egg to the minced meat and mix thoroughly again.

Shape the minced meat into meatballs.

Cut the second onion into cubes, the carrots into slices. The potatoes should also be cut into small cubes.

Heat the vegetable oil in a saucepan with a thick bottom, add the onion and carrots and simmer a little until the onion is transparent.

Pour 1.5 liters of hot water from a kettle into a saucepan and immediately dip the potatoes into the water.

Cook the soup for 10 minutes.

Then add meatballs and small pasta to the soup.

Stir the soup and add a little salt. Cook until cooked potatoes and pasta.

Simultaneously prepare egg-lemon sauce. To do this, divide 2 eggs into whites and yolks. Beat the whites into a strong foam, add lemon juice to the yolks and stir thoroughly.

Combine whites and yolks, add a tablespoon of sifted flour and mix well so that there are no lumps.

The resulting mixture must be added to the ready-made soup, but first, take a few spoons of broth from the pan into it and stir so that the sauce does not curl up in the hot soup. Then carefully, in portions, pour the sauce into the saucepan.

Add dry parsley and pepper to the soup, taste with salt. Add if required.

Pour the prepared Greek soup with meatballs into plates and serve.
