To prepare a creamy soup with meatballs and processed cheese, we need heavy cream with a fat content of 30 percent or more, processed cheese, minced pork, and the ingredients traditional for the soup - potatoes, carrots and onions.
Grate the carrots with large holes, cut the potatoes into small cubes, and chop the onion with a knife.
Immediately put the carrots and onions to fry in sunflower oil. Do not forget to stir.
Fry until light golden brown.
Put the potatoes in a saucepan, add water and put on fire. I added 750 ml of water, the soup turned out to be a thick, light sauce consistency. If you want the soup to be less saturated, you can take more water. Bring to a boil, salt and cook for 5 minutes.
During this time, we will prepare the meatballs. Salt and pepper the minced meat. Optionally, you can add onions and garlic minced through a garlic press, or skip the minced meat again through a meat grinder with onions and garlic. I pass the meat for minced meat through a meat grinder twice so that there is a more homogeneous structure. If I buy ready-made minced meat in a store, then I also pass it through a meat grinder again.
Form the minced meat into meatballs, about the size of a quail egg. Cut the melted cheese into small pieces.
Add the meatballs to the soup.
Add fried onions and carrots and processed cheese immediately. Cook for 15-20 minutes - until the potatoes, meatballs are ready, and until the cheese melts.
Boil for a minute and taste. Add salt (if necessary) and pepper to taste. Add some greenery. Creamy meatball soup is ready.
