When buying salmon in a store or at the market, I usually take a whole fish, and I advise you. This is the only way to be sure that you will be sold a quality product. You can make whatever you want from the main part of the fish: at least salt it, at least fry or bake steaks. The head and tail are those parts of the salmon from which an excellent fish hodgepodge is obtained. Try to cook it with us and you will not regret it.
Wash the tail and head of the salmon thoroughly. Separate the fillets from the tail and cut into medium sized pieces. Set aside the head, bones and everything else - we will cook fish broth from them.
Peel carrots and onions. Prepare black allspice and bay leaves.
Pour 3 liters of filtered water into a saucepan, put the broth ingredients (head and bones) in it, bring to a boil and remove the foam until it stops appearing. Then add carrots, onions, black peppercorns, bay leaves. Reduce heat, cover and cook for 40-50 minutes.
Strain the finished broth through a fine sieve or cheesecloth.
Cut onions (2 pcs.) Into half rings.
Prepare capers and olives. Capers add zest to the soup, if you make a soup - appreciate it, sometimes pickles are used instead of them.
Grind fresh tomatoes with a blender.
Heat a small amount of olive oil in a frying pan and fry the onions for about 5 minutes.
Put onion, in a frying pan, tomato puree and capers. Stir and simmer for 5-7 minutes.
Put the strained fish broth on the fire and add the onion-tomato frying and bring to a boil.
Add pieces of salmon fillet, cook for another 5-7 minutes. Add olives, continue to cook for 3-5 minutes, then remove from heat and let the soup steep, covered for about 5 minutes.
Pour the fish hodgepodge into plates, add 2 small lemon slices and decorate with herbs. It turns out a very tasty and healthy soup with sourness.
