Ukha is a light and nutritious first course. We do not have to puzzle for a long time over how to cook pike fish soup, because this dish is prepared quickly and simply, much faster than, for example, fish soup or pike in foil. However, if we have a large enough fish, then these recipes can be combined, for example, cook fish soup from the head of a pike, and bake the carcass in the oven or cook a body from it.
Today my pike is not very big, so I use all of it for fish soup. As a result, I will get a rich soup. Fans of first courses of fish, probably, often observed that often the next day the ear stored in the refrigerator becomes jelly-like, resembling jellied meat. This means that the broth was quite rich and rich.
In addition to potatoes, millet or pearl barley is often put in the pike ear. Barley takes a long time to cook, so I won't use it.
Peel the carrots and cut them into circles or cubes.
Also dice potatoes.
Put everything in a pot of water.
Add washed millet.
Chop the onion coarsely and add it to the pot along with dry parsley. Let's start cooking. The fish cooks pretty quickly, so we put it in the last place when the potatoes and carrots are already cooked. Salt the soup immediately.
While the potatoes are boiling, let's take care of the fish. I cleaned it in advance, and gutted it in advance. And now I'll cut it into pieces.
Let's process the pike's head: remove the gills and eyes from it.
After about 20 minutes, the potatoes will be ready, add chopped fish pieces, bay leaves, seasoning for fish to the ear. Cook for another 15 minutes until the pike is ready.
