The head of a large fish is mainly used for making fish soup, do not fry it or marinate it … So I bought a big silver carp, pickled the fish itself (recipe for a silver carp herring), and left the head for the fish soup.
The soup turned out, to put it mildly, dietary, but the fish broth was rich and rich in taste. Do you want to learn how to cook fish soup from a silver carp head? The secret is that the head should be boiled in water for a long time until it begins to boil and disintegrate, then the broth will be excellent, and the ear itself will turn out delicious, even if it is from only one head:))!
So, to prepare fish soup from the head of a silver carp, prepare water, potatoes, silver carp (a whole fish for the subsequent cutting off the head, or just the head, the ear from it:)), onions, green onions, dill, carrots, salt, ground pepper and laurel sheet.
Peel the potatoes, cut them into cubes, and transfer to a pot of water. Put the pot on fire and let the potatoes cook for about 7-10 minutes.
While the potatoes are cooking, separate the silver carp head from the carcass. Be sure to remove the gills and wash your hair several times. You can also remove the fins, if you like.
After 7-10 minutes, add half a small onion or a quarter of a large onion and grated (fine grater) carrots to the pan. Dip the silver carp head into the pan.
Let the liquid simmer and keep the heat as low as possible. Boil the ear until the head begins to disintegrate (20-25 minutes). Remove the onion from the almost finished fish soup and discard it.
And add chopped green onions and dill to the ear, as well as bay leaves and ground pepper. Let the ear boil again and turn off the stove.
The ear from the head of the silver carp is ready. Serve it like this: put the silver carp's head on a common plate, and pour the fish soup into bowls, let each eater remove the fish meat from his head into his plate.
