A simple and quick soup made from pearl barley, canned saury and vegetables. You need to soak the barley in advance, and then an hour - and the soup is ready!

Ingredients

Canned saury - 245 g

Pearl barley - 2 tbsp

Potatoes - 2 pcs.

Carrots - 1 pc.

Onions - 1 pc.

Cucumber - 1 pc.

Fresh greens to taste

Salt, pepper - to taste

Bay leaf - 1 pc.

I never cease to be amazed at the simplicity, speed and “deliciousness” of soups prepared with the use of canned fish. Today I am sharing one of them - a fish soup with canned saury, barley and vegetables. Preparing the latter is probably the most inconvenient step in the recipe. You always need to think over the preparation of the dish in order to soak the cereals in the evening. You can omit this process, but then I do not promise that the soup itself will take you a little time.

This time I added cucumber to potatoes, carrots and onions - for the freshness and juiciness of the soup. Greens serve the same function in a dish. But besides salt and pepper, you are free to use other spices. I got by with a bay leaf, the saury itself is painfully fragrant, albeit canned. From this amount of ingredients, I made a soup for four good servings.

Let's start with barley. The groats must be soaked in advance for 10-12 hours. It is better to do this procedure in the evening and cook the soup the next day. After soaking, it will increase in size by about 1.5-2 times and cook faster. Thoroughly rinse the swollen groats under running water.

Bring the water in a saucepan to a boil. Salt and spread the prepared pearl barley. Cook for 10 minutes.

In the meantime, we will cut the peeled vegetables: onions and carrots - into small cubes, potatoes - into larger cubes.

Put vegetables in a saucepan and cook the soup for another 10-15 minutes. At this stage, cereals and vegetables should reach almost full readiness.

Open the can of canned fish, take out the saury into a convenient bowl and knead the pieces with a fork along with the liquid.

Put saury and bay leaves in the soup. Cook for another 5 minutes.

It's time for greenery. Cut a cucumber into small cubes, and finely chop fresh parsley / green onions / dill with a knife.

We put it in the prepared soup, add some salt to the dish to taste, pepper.

Stir and leave under the lid for 10-15 minutes until fully cooked.

Canned fish soup with barley is ready! Serve to the table, garnished with fresh herbs. I also like to serve sour cream soup. Enjoy your meal!

Important additions to the recipe

You can use any saury for cooking, that is, with butter or only in your own juice. The fat content of your future soup will depend on this.

  • Use any fresh herbs to taste. You can do with dill or add the herb that you prefer more.
