One of the variations in the preparation of cold Russian soup is okroshka with crab sticks and kvass.

Okroshka is a cold summer soup. Russian okroshka is certainly a lot of kvass, a lot of greens and a meat product. We will leave the meat okroshka to the meat-eaters. I propose an alternative snack - okroshka with crab sticks. Diet okroshka with crab sticks is no worse than classic okroshka with sausage.
The cold soup is very tender. There is no fishy smell in it. For those who do not like okroshka with kvass - add any other suitable drink: mineral water, ayran, kefir, etc. My children eat crab okroshka with a regular salad.
We take products from the list. We will add each ingredient in stages to the salad bowl.
We need boiled potatoes in their uniforms. For okroshka, it is better to take small, even rounded tubers. Cook no more than 15 minutes after boiling, young potatoes - no more than 7-10 minutes. Peel the potatoes. Cut into cubes.
We buy chilled crab sticks. There is a lot of moisture in frozen ones and they quickly break down into fibers. Cut the sticks into cubes and then into cubes.
We also cut a fresh cucumber into cubes.
