I suggest you cook a deliciously delicious fish soup from burbot. Burbot is a freshwater fish that belongs to the cod family. We have burbot found both in the Ob and in the Ob reservoir (we lovingly call it the sea). In general, the distribution area of burbot is extensive; it can be found in European rivers, and in North America, and in Central Asia. Burbot is very pretentious to the purity of the water, loves deep water. Burbot has practically no scales, it is enough to wash it in water, rubbing it with a brush. There are very few bones, the meat is tender and dense. Many dishes are prepared from burbot, and today let's enjoy a wonderful burbot soup.

So, to prepare fish soup from burbot, we need: the head and tail of the burbot, potatoes, onions, carrots, a little vodka, salt, pepper and herbs.

Put 2 liters of water on fire, prepare vegetables. Chop the onion finely. If you don't like onions in your ear, just add a whole onion and take it out at the end of cooking.

You don't need to add carrots, but if you are cooking not while fishing, but at home, you can add it for aroma, color and taste.

Cut the potatoes arbitrarily, as convenient.

Place vegetables in a saucepan and bring to a boil over medium heat.

Let the vegetables simmer for 5-7 minutes, add the head and tail of the burbot.

Add salt, peppercorns, leave to cook the fish soup over medium heat for 15-20 minutes. Five minutes before readiness, pour in vodka. It does not feel like alcohol at all, but it gives aroma and "strength" to the broth. Turn off the heat, add a bay leaf and let the ear steep for 10 minutes. The burbot soup is ready!
