Ear from salmon belly is obtained more budgetary than ear directly from salmon, using not only a standard set (head, tail), but also fish fillets. Since this part of the fish is quite oily, the ear is very rich. If this soup is not to your liking, it is better to use the less fatty parts of the fish. The rest of the ingredients are familiar (potatoes, vegetable frying, spices and herbs).

Prepare all the food you need. Peel and wash potatoes, carrots and onions. You also need to wash the bellies of the salmon. If they have fins, they do not need to be removed.

First of all, you need to put the broth to boil - you will need abdomens, bay leaves, you can take peppercorns, cloves. If available, roots (fennel, parsley, celery, parsnip) can be used. By the way, sometimes in the summer I freeze such a blank for the winter, putting it in containers in small portions. The broth is very aromatic. The bellies and spices need to be poured with water and cooked over low heat.

While the fish broth is cooking, you need to prepare the vegetables. The potatoes should be cut into small pieces or cubes. After 20 minutes of cooking the broth, you can send the potatoes to the pot.

Chop carrots and onions, then fry in refined oil until soft (5-6 minutes over low heat). After frying, transfer to a saucepan. At this stage, you can remove the belly from the pan, separate the pieces of meat from the fat and skin and throw them back into the pan.

Now you need to salt the fish soup and cook for another 15 minutes until the potatoes are soft. Ready-made fish soup from salmon belly can be served immediately, always with chopped fresh herbs.
