If there is a chance and your "nets have brought" a large catfish, one carcass can be put into two dishes. For fish soup, it is enough to leave the head and tail, and cut the main part with steaks or chop into minced meat for fish cutlets-meatballs.
Catfish has very tender, tasty meat and practically no small bones, there is no usual large scales, which greatly simplifies cutting. For the scent of yushka, add spices, roots, herbs.
Take products for making fish soup from a catfish head according to the list of ingredients. Remove the gills, scrape and rinse the fish thoroughly before cooking.
We lower the head and tail of the catfish into boiling water, boil it again, remove the foam.
Throw in cilantro, dill, parsley or other herbs, bay leaves, peppercorns.
