When I buy red mullet, I always take it with the expectation that besides the fact that I will bake it deliciously in the oven or grill it, I can also cook delicious fish soup from it.
Fish soup with red mullet is a dietary dish, easy to prepare, very tasty. I make this soup with or without rice. With rice it turns out more satisfying, without - an easier version of the soup. And yet, you can cook the soup in fish broth cooked on some cheaper fish, since red mullet is not a cheap fish.
We will prepare all the products according to the list.
Peel the potatoes and cut them into strips or cubes, as you like.
Fill the potatoes with water or fish broth and put the pan on the fire. If boiling in water, add salt to the water.
Cook for about 20 minutes until the potatoes are soft.
If you cook soup with rice, then add rice to the pot along with the potatoes.
While the potatoes are boiling, prepare the fish. We will clean it of scales, cut it along the abdomen and remove the insides. Let's wash the fish under running water.
Put red mullet in a saucepan and cook the soup for another 10 minutes.
Quickly dice the onions and cut the fennel stalks into rings.
Heat the vegetable oil in a frying pan and fry the vegetables until soft, for 5-7 minutes, stirring occasionally.
Put the fried onions and fennel in a saucepan with fish soup, let the soup boil and cook for another 3-4 minutes.
At the very end of cooking, add fresh fennel, parsley, dill, whichever you prefer.
Red mullet fish soup is ready. Pour it into portioned plates and lay out one fish per portion. You can put a whole carcass, or you can disassemble the fish, remove the bones and put only fish fillets in the soup.
