Ukha is a very simple fish broth soup made with one or more types of fish. Due to its simple composition, this soup is especially popular with fishermen, because all that is needed besides fish is onions, carrots and onions. They cook it in a pot, over a fire, adding a little alcohol to the broth.
Peel the pike-perch carcasses of entrails and scales, remove the gills, wash in cool water. Cut the fish into portions. Unfortunately, I only had one fish, but as it is written in the ingredients, at least 600 grams is recommended.
Pour 2 liters of cold water into a saucepan, put fish in it and put on fire. When the water boils, remove the foam.
Add bay leaf, peeled onion, black peppercorns. Reduce heat, cover and simmer for 20 minutes.
Chop the carrots into small pieces.
Peel and chop the potatoes coarsely enough.
Strain the broth - discard the onion and bay leaf. Set aside the fish. Add a piece of butter to a saucepan and put it on fire.
Add carrots, potatoes and salt to the broth. Cook the soup until the potatoes are ready.
Pour the pike perch soup into plates, put the pieces of fish, and garnish with herbs.
