Flavored fish soup from all parts of salmon (head, tail and flesh). This fish soup recipe is suitable for all types of red fish.

Ingredients

Salmon head - 1 pc.

Salmon tail - 1 pc.

Salmon steaks - about 250 g

Salt to taste

Water - about 1.5 liters

Onions - 50 g / 0.5 heads

Potatoes - 150 g / 2 pcs.

Step by step recipe with photo

There is practically no classic salmon fish soup recipe, but there are ways to make this soup as delicious as possible!

Prepare the ingredients: the head, tail, and flesh of the salmon. Usually they are frozen, and it is better when blast-frozen. Defrost gradually: From the freezer, transfer the fish to the refrigerator for a few hours, and then continue at room temperature.

The gills must be removed (broken and cut off) from the salmon head. Sometimes it is recommended to remove the fish eyes too, but I do not catch the deterioration in the broth with them …

Cut pieces with pulp from the head and tail of the fish.

Place the head, tail and chunks of pulp in a saucepan, cover with water and bring to a boil. After boiling, remove the foam.

After about 15 minutes of boiling over medium heat, remove the pulpy pieces.

And let the head and tail continue to cook for another 30-45 minutes, or rather, boil for a rich broth. While the broth is cooking, peel the cooled salmon pieces of skin and bones. They can be added either to the prepared soup, or laid out on plates when serving.

Strain the broth through a sieve.

This rich broth with pieces of salmon is enough for me, but the rest of the household requires the addition of potatoes and onions. To do this, bring the broth to a boil again, add finely chopped onion and diced potatoes into it.

Simmer over low heat for about 15 minutes.

Very tasty, rich and aromatic salmon ear (head, tail and flesh) is ready.

If desired, accompany it with white or rye bread croutons.
