Today we will cook a very tasty old Russian fish soup Kalya on cucumber brine and pickled cucumbers. A real fish pickle!

Prepare all the food you need for the old Russian fish soup Kalya. Peel the onions, carrots and potatoes, wash with salmon and herbs under running water. Remember to remove the gills.
Smoked fish in kalyu is added for flavor and aroma. I managed to buy the freshest lightly salted smoked herring, but absolutely any fish will do. Lay out the head of the salmon, as well as the head and tail of smoked herring, fill them with cold water, cook for 30 minutes after boiling the water. Skim off the foam constantly.
Fry onions and carrots in a small amount of vegetable oil, add chopped celery. Instead of celery stalks, you can put the root.
Cut the pickled cucumbers into thin slices, add to the pan, simmer for a couple of minutes over low heat.
Carefully remove the fish from the broth, if necessary, the broth can be filtered.
Potatoes in kalya are optional, they began to be added only in the 18th century. Cut into small cubes, add to the broth, cook for 10 minutes. After 10 minutes, add the stewed vegetables, cook for another 10 minutes.
Clean smoked fish from entrails, skin and bones. Cut half the fillet into thin slices or cubes. The second half of the fish is not needed; you can make salads or snacks from it.
Separate the meat from the bones in the boiled salmon. If the head is large, then there will be a lot of meat.
Pour the cucumber pickle into the soup, bring to a boil, immediately add both types of fish. Add salt and pepper and bay leaves. Cook the soup for 5 minutes maximum.
Collect the remaining foam and fat from the surface of the soup, add chopped fresh herbs, stir, turn off the stove immediately. Cover the pan with a lid, leave to infuse for a while.
The fish kalya is ready.
