Excellent dietary vegetable soup! Very light but satisfying at the same time.

Ingredients

Eggplant - 2 pcs.

Red lentils - 70 g

Bulb onions - 1 pc.

Garlic - 2 cloves

Tomatoes in their own juice - 1 can (400 g)

Salt, pepper - to taste

Bay leaf - 1 pc.

I hasten to share the recipe for a delicious soup! Despite the fact that it contains neither meat nor meat broth, the soup turns out to be quite satisfying. It is versatile: in the heat it will be a light lunch, and in the cold it will be a cozy lunch:-) And you can also puree the eggplant soup. And still no one bothers you to cook the same soup in meat broth.

Tomatoes can be taken both fresh and in their own juice.

Greenery. I advise you to take basil, the soup tastes better with it. And so, of course, take any greens that you like.

So, for making soup with eggplant and tomatoes, let's prepare the products according to the list.

Rinse the lentils, put them in a saucepan, fill them with water, add the bay leaf and cook until soft. This will take about 15-20 minutes.

While the lentils are cooking, fry the eggplants. Peel, cut into cubes and fry in sunflower oil until soft. Let's put it aside.

Usually eggplants are salted and poured with water to remove the bitterness. I did not do this procedure, because the eggplants did not taste bitter.

Preparing the dressing.

Fry the onion and garlic. Add the tomatoes in our own juice. Simmer, stirring occasionally, for a couple of minutes.

Meanwhile, the lentils were cooked. Put the eggplant and dressing in a saucepan. Boil it for a few minutes. Salt and pepper to taste.

We turn off the gas. Add chopped basil to the eggplant soup. Let it brew for 10 minutes.

Serve hot.
