Armenian Bean Soup / Lobahashu - delicious, healthy, hearty and made with the most affordable ingredients. Select peppers to taste: ground black and allspice, and if you like it sharper, then add ground red.

Prepare beans, onions, walnuts, peppers, flour, butter, and lots of herbs.

The beans need to be soaked for a few hours or overnight, then cooked for 1.5 hours.

Leave half of the beans in the broth and puree the other half.

Chop walnuts too.

Chop the onion and simmer in butter.

Dry the flour in a dry frying pan.

Pour in the broth from boiling beans, stir and you get a sauce for thickening the soup.

Combine whole beans, bean puree, onions, walnuts and sauce and stir.

Pour in the broth in which the beans were cooked, add salt and pepper, bring to a boil.

Chop the greens finely.

Add the herbs to the soup removed from the heat, let it brew and the Armenian bean soup is ready.
