Each housewife has her own borscht recipe. I offer you a lean borscht in aromatic oil. In my family they love him more than meat broth. I draw your attention, in the ingredients I indicated tomatoes and tomatoes in their own juice. The second I added only because the tomatoes were not red enough for me. You can add only tomatoes in your own juice. Then it is easier to take those that are already cut. And also - if you have parsnips - be sure to add them! The borsch will turn out to be incredibly aromatic! Serve with sour cream, yogurt.
For cooking, we will need: cabbage, carrots, beets, tomatoes, sweet peppers (I have frozen), onions, salt, pepper, bay leaf, unrefined sunflower oil, herbs (I have dill), potatoes, garlic.
Peel the potatoes, cut them as conveniently as we are used to. For me - in cubes. Fill with water and set to cook.
While the potatoes are boiling, let's start dressing for borscht. We will cut all the vegetables again as you like. I have everything again in straws, onions - in cubes. Fry a little in aromatic oil. I always fry over high heat, stirring quickly, for just a couple of minutes. Then add the tomatoes. I just cut them into cubes. I do not remove the peel: it does not bother me in the finished dish. Let me remind you that I also added tomatoes in my own juice. Simmer until the liquid is almost completely evaporated.
By this time, the potatoes are almost ready. Add dressing to it and boil for a couple of minutes until the potatoes are ready.
Chop the cabbage and send it to the pan. Cook the cabbage until soft. I love it to crunch, so I boil it for just a couple of minutes.
Let's add a bay leaf. Salt and pepper. Lean borscht in aromatic oil is ready. Serve hot, sprinkled with herbs. In my case, this is dill. Enjoy your meal!
