Today I am adding another great vegetable soup recipe to our website, which is suitable for both vegetarians and fasting people. Onion soup has joined the ranks of traditional French dishes for a long time. It was once especially popular with the poor for using the simplest ingredients - onions, carrots and flour. Today it can be found on the menu of any French restaurant.

Ingredients

Bulb onions - 4 pcs.

Carrots - 1 pc.

Vegetable oil - 2 tbsp.

Flour - 3 tbsp. l.

Ground black pepper - to taste

Thyme to taste

Salt to taste

For croutons:

Black bread - 4 slices

Cheese - 100 g

As you might guess from the name, the main ingredient in our soup is onion, which must be peeled and finely chopped.

Grate the carrots.

Pour 2-3 tablespoons of vegetable oil into a saucepan and put carrots and onions. Stir and put on a small fire, cover with a lid. Leave the vegetables to simmer for 20 minutes. In the process of stewing, the whole mixture will acquire a pleasant aroma, and the onion will get rid of bitterness.

Add 3 tablespoons of flour, black pepper, thyme and salt to taste into a saucepan with onions and carrots (you can add salt later). Stir all ingredients.

Pour the contents of the pot with 2 liters of water and cover. Put on low heat and cook for about 10 minutes. In the process of cooking, you can try and, if necessary, add salt to the soup.

In the meantime, you can start making croutons for onion soup. To do this, cut off 4 slices of brown bread and put grated cheese on top of each. Put the bread in the oven for 30 minutes at 160 degrees.

Cut the finished bread with melted cheese into small squares.

When serving French onion soup, garnish with cheese croutons.
