I offer you a delicious lean pickle. This is the first hearty dish that can be prepared with rice or pearl barley. My family loves rice more, so my version of the pickle will be with it. Pickle must be prepared with pickles and the addition of brine to it. Cucumbers can be cut into cubes, strips, or coarsely grated. I remember my grandmother cut it into cubes and I did it for a long time. This time I decided to try to grate the cucumbers - this added a certain thickness to the soup.

To make a lean pickle we need potatoes, carrots, onions, pickles, garlic, rice, sunflower oil, tomato paste or thick sauce, pepper, salt, cucumber pickle and water.

Dice the potatoes.

Pour water into a saucepan, add potatoes and turn on the fire. Bring the potatoes to a boil, remove the foam and simmer for 10 minutes over low heat. Then add the washed rice. Cook until rice is done.

For frying, finely chop the onion, grate the carrots on a medium grater. Heat sunflower oil in a frying pan and fry the onions and carrots. Add chopped garlic. Fry, stirring occasionally for 5 minutes.

Grate cucumbers, add to the pan. Stir and fry for 5 minutes.

Then add tomato paste or sauce.

Transfer the frying to the soup, add the bay leaf and pour in the brine. To taste. Add salt and pepper as needed. Remove from heat.

Let the soup brew for 20-30 minutes.

Pour into portions and serve immediately.
