Tomato puree soup with rice is a very, very simple dish that even a novice cook can handle. It is suitable for vegetarian and even vegan diets, for low calorie diets, or for those fast days when oils are not consumed.

You don't need a blender, pestle, or a sieve to make this tomato puree soup! Indeed, in this case, tomatoes are not mashed by the cook, this soup is made from tomato juice. And we reach the consistency of cream soup or puree soup by evaporating this juice and absorbing excess liquid into rice. For 1 liter of tomato juice, it is rational to take 50-100 g of rice. Depending on this, your tomato puree soup will be thinner or thicker. I have shown a thick version. In liquid - rice is sometimes completely invisible on the surface.

The seasoning mix is completely arbitrary - whatever you think goes well with tomatoes. I have fresh parsley and basil. It could just as well be a dried Mediterranean or Provencal blend.

Put the rice in tomato juice, close the pan with a lid, bring it to a boil over high heat and then cook over low heat for 10 minutes.
