Mashed potato soup with pumpkin attracts with its delicate and velvety structure, as well as the availability of products for its preparation. You can take any pumpkin, fresh or frozen.
When frying carrots, it will be nice if you add onions or leeks to the pan. You can take asafoetida in a spice set for those who do not eat onions.
Of those spices that are good "friends" with potatoes, ground black pepper, a little grated nutmeg are ideal, and will also advantageously complement the flavor range of curry, turmeric, and ground wig.
Put potatoes and pumpkin cut into small pieces into a saucepan (you don't need to defrost it). Fill with boiling water, add salt, put on fire and after boiling, cook over minimum heat for 20-30 minutes (depending on the type of potato).
While the potatoes and pumpkin are boiling, grate the carrots on a coarse grater. Heat the vegetable oil in a skillet, fry the carrots together with the spices until soft, add the ginger grated on a fine grater, fry everything together until a light blush.
Grind the finished potatoes and pumpkin with a blender in mashed potatoes.
Add carrot and ginger stir-fry and chop again.
Serve hot, cooked mashed potato and pumpkin soup. The dish can be supplemented with sour cream, cream, crackers, grated cheese, fresh herbs.
