Sometimes nourishing soups and borscht are replaced by delicate low-calorie puree soups. This is a relief for the body and not bad for a change. There are many recipes for mashed zucchini soups. I suggest making the simplest one, with the minimum amount of ingredients.
Ingredients
Zucchini - 1 pc.
Carrots - 1 pc.
Bulb onions - 0.5 pcs.
Potatoes - 1 small
Garlic - 1 clove
Vegetable oil - 1 tbsp.

Bread for croutons - 2-3 slices

The recipe is given for one or two servings, depending on the appetite. To make zucchini soup with croutons, prepare all the products on the list.
Cut vegetables into random pieces. The finer, the faster the soup will cook.
Heat vegetable oil in a saucepan and add onion and garlic. Bring them with stirring until transparent. This will take a couple of minutes.
Add carrots and keep on fire for a couple of minutes.
Then put the remaining vegetables, mix several times, salt. You can add your favorite spices and seasonings. I didn’t add.
Pour water over the contents of the pan so that it covers the vegetables. Bring to a boil and cook, covered, until the potatoes are tender and soft.
Meanwhile, prepare the croutons. This can be done in any way that suits you.
1. Toast the bread cubes in a pan with a drop of oil.
2. Dry them in the oven.
3. Toast the slices of bread in a toaster, leave to cool, and then cut into slices. I used the third option, it is the simplest.
When the vegetables are tender, remove the soup from the stove and blend with an immersion blender until puree and smooth.
Pour soup into bowls, top with croutons and sprinkle with herbs.
