Despite the fact that onion soups are found in national cuisines of different countries, it is more often associated with French cuisine. The soup is simple in terms of the composition of the ingredients, but at the same time it is very interesting, and if you try, then it tastes exquisite.
Ingredients
Per serving:
Onion - 1 large head;
Broth or water - 1 glass
Cognac - 1-2 tsp
Baton (baguette) - 1-2 slices
Cheese (emmental or the like) - 50 g
Butter - 1-2 tablespoons
Salt to taste.

Prepare onions, broth or water, cheese, cognac, butter and a loaf (baguette).
Chop the onion (I'm in a blender) and simmer in butter for five minutes.
Add cognac and simmer for another couple of minutes over low heat while stirring. The onions should become stewed - simmered, darkened and, as it were, transparent, and not fried.
Dry the slices of white bread.
Transfer the onion mixture to a tureen dish suitable for baking in the oven or in a micron or something similar.
Pour in broth or water, salt.
Place dried pieces of white bread on top.
Sprinkle, but essentially cover with grated cheese.
Bake in the oven until the cheese is melted, i.e. about 15-20 minutes at 180-200 degrees.
