Delicious and healthy vegetable puree soup is a great option for a family dinner.

Ingredients

Zucchini - 1 pc.

Bulb onions - 1 pc.

My family adores pureed soups, so I cook them quite often. In summer, of course, there is an opportunity to cook them more often and from completely different vegetables, in winter you have to cook such soups less often because of the high cost of some products. This time I managed to buy my favorite stalked celery - it is incredibly aromatic and tasty in soups, and the rest of the vegetables are always on sale.

To make a squash soup with mushrooms and celery, prepare the foods on the list. Vegetables need to be washed, dried, mushrooms must be cleaned with a hard kitchen sponge.

Heat vegetable oil in a frying pan, fry chopped onions in it for several minutes, add coarsely chopped celery.

Add coarsely chopped mushrooms, cook for a few minutes.

Transfer the sautéed vegetables to a saucepan, add the sliced courgette. Pour in just enough water to lightly cover the vegetables and cook over low heat for 15 minutes.

Add the chopped tomato, season with salt and pepper and cook for another 10 minutes.

Add chopped herbs, stir soup.

Punch it immediately with a blender until puree. I usually pour the soup broth into a cup and add it as needed after beating, adjusting the soup to the desired thickness.

Pour in medium-fat cream, stir the soup, heat it for a few minutes.

Serve immediately. Zucchini soup with mushrooms and celery is ready.
