I want to share with you a recipe for a zucchini soup-puree, which is prepared for one-two-three. Everything is really very, very simple and fast.

You only need 3 ingredients to make it, not counting the sunflower oil.

I additionally added cream to the soup: I really like the delicate creamy taste that any cream soup gets, where cream is added. If you don't add this ingredient, you will get a lean soup, which, accordingly, can be eaten in fasting.

To prepare the zucchini puree soup for one, two or three, prepare the products according to the list.

Chop the onion at random and fry in sunflower oil until soft, but it should remain light, not tanned.

Add some sliced potatoes …

… and zucchini.

Fill with water so that it only slightly covers the vegetables.

Cook vegetables until soft.

At the same time, some of the water will boil away, and there will be just enough of it to turn the soup into puree.

If it suddenly happens that there is a lot of water, just take it out with a cup, and then, if necessary, add it.

If it turns out that there is less water than necessary, add water to the pan.

Punch the soup with an immersion blender, salt to taste.

Zucchini puree soup for one-two-three is ready. It can be served like that.

But if you want a non-lean version of the soup, add heavy cream to taste. Stir well, heat the soup.

The soup is ready. It took no more than 30 minutes to cook it.

For serving, you can fry the zucchini by cutting them into thin slices and sprinkling with salt and Provencal herbs.
