An easy version of beetroot soup without meat in vegetable broth with canned red beans. Can be served hot or cold.

Beetroot, beetroot! Always so different, but always so delicious. Now they make it hot, cold, with or without meat, literally everyone has their own way of cooking.
We're going to cook beetroot soup with canned red beans today. By the way, instead of the latter, you can take ordinary beans and boil them in advance. Canned food simplifies the process and reduces time. The rest of the vegetables are standard, and, of course, beets. To simplify the task as much as possible, I bought one already boiled in a vacuum package. Of course, to do everything better ourselves, but how things are accelerating! An hour is the maximum amount of time it will take for you to slowly cook dinner.
This dish is both vegan and vegetarian and lean. But it will suit everyone in the summer. Low-fat and light cold with sour cream is the best soup for a hot day. But no one forbids cooking a dish in winter and serving it hot. The main decoration is fresh herbs. Therefore, be sure to save it for the winter. Well, in the summer it will not be difficult to find green tea, it will really make the beetroot with beans tastier.

Cut the peeled onion into small cubes.
Cut the carrots into semicircles.
Cut the potatoes into small cubes.
Put the vegetables in a pot of boiling water and cook for 10 minutes.
At this time, we also cut the boiled peeled beets into cubes.
Add canned beans and chopped beets to the soup. If you have beet juice, pour it into the pot as well.
Stir and cook for another 5-7 minutes.
At the end of cooking, put bay leaf into the dish, salt and pepper to taste. Cook for another 5 minutes and remove from the stove. We insist 10 minutes and serve, decorate with fresh herbs and sour cream.
