A variation of the Georgian kharcho soup, in which there is no meat and other animal products.
Ingredients
Onions - 1 pc.
Carrots - 1 pc.
Potatoes - 4-5 pcs.
Garlic - 1/2 pc.
Rice - 100 g
Cilantro - 1 bunch
Walnuts - 50 g
Tkemali sauce - 100 g
Tomato paste - 30 g
Chili pepper - 1/2 pc.
Olive oil - 30 ml
Salt, pepper, coriander, bay leaf - to taste

Georgian kharcho in meat broth is often prepared without carrots and potatoes - in the lean version I suggest including root vegetables. But we do not forget the obligatory tkemali sauce, walnuts, white rice, coriander + cilantro, otherwise we will not get a characteristic aroma, saturation of kharcho (my tkemali sauce is from winter preparations).
To make lean kharcho soup, take the foods on the list.
Dry the walnut kernels in a pan or in the oven. Rice before boiling in soup for half an hour in cold water (soften faster).
Wash, peel, cut vegetables (potatoes, carrots, onions) in a convenient way.
We send it to boiling water, pour in olive oil, throw in the bay leaf and cook without salt for 10-15 minutes.
We lower the portion of the swollen rice. We continue to cook with active boiling for the next 5-7 minutes.
Season lean kharcho soup with rich tkemali sauce, paint with tomato paste, boil. We try, salt to taste.
Grind nuts, coriander, garlic, pepper, add the mixture to the kharcho soup immediately, or pour it into plates. Don't forget about fresh cilantro.
