Delicious and healthy lean mushroom soup (pickle) with dried porcini mushrooms. A great vegetarian meal for every day.
Water - 1500 ml
Dried mushrooms - 40 g
Capers - 1 tablespoon
Potatoes - 150 g
Pearl barley - 50 g
Bay leaf - 2 pcs.
Bulb onions - 1 pc.
Refined sunflower oil - 2 tbsp.
Carrots - 1 pc.
Pickled cucumbers - 50 g
Ground black pepper - to taste
Salt to taste
Sugar - 1 tsp
Tomato paste - 1.5 tbsp
Garlic - 3 cloves

A tasty and healthy pickle without meat, for the preparation of which a traditional set of products with the addition of white dried mushrooms was used. The soup will appeal to vegetarians and those who are fasting.
For cooking, take the foods listed on the list.
Rinse the pearl barley, pour in the indicated amount of water and bring to a boil. Simmer over low heat for 15-20 minutes.
While the groats are cooking, rinse and soak dried mushrooms in warm water. Then squeeze and cut into slices.
In vegetable oil, cook a fry of pieces of onion and pickled cucumbers, grated carrots and tomato paste. Salt a little and add a spoonful of sugar.
After 20 minutes of boiling, add the fry, chopped mushrooms to the barley and salt the soup to taste. Cook for about 10 minutes, then add the potato cubes and minced garlic. Cook until potatoes are cooked through.
Vegetarian pickle with dried porcini mushrooms is ready! Serve hot. Enjoy your meal!
