Ingredients

Vegetable oil - 2 tablespoons

Onions - 1 pc. (200-250 g)

Garlic - 6-8 cloves (1 head)

Celery root - 700 g

Potatoes - 300 g

Water - 700-800 ml

Bay leaf - 1 pc.

Cream 10-20% - 200 ml

Salt to taste

Appetizing, creamy celery root cream soup is a great option for a low-calorie, simple, hearty and tasty first course. Made with root celery and a little potatoes, fried onions and garlic, the soup is nutritious and spicy, light, incredibly tender and creamy in texture. For a pleasant contrast, the soup can be served with crispy croutons or homemade croutons. Try it!

You will need these ingredients to make the classic celery root cream soup.

Heat vegetable oil over medium heat. Add chopped onions and, stirring occasionally, sauté until golden brown (about 6-7 minutes).

Add finely chopped cloves of garlic and sauté for another 50-60 seconds, until aroma appears.

Add the peeled and diced celery and potatoes.

Pour in enough water to lightly coat the vegetables. Add bay leaf and bring mixture to a boil.

Add a few pinches of salt and ground black pepper, cover the pot and cook the vegetables for 20 minutes, until tender.

Then remove the bay leaf and chop the vegetables with a hand blender.

Pour in the cream and, stirring occasionally, bring the soup to a boil. As soon as the soup boils again, turn off the heat. Taste the soup and add more salt and ground black pepper if needed to taste.
