With the advent of fresh sorrel on sale, my family's diet includes a wide variety of soups and borscht, since in winter I mainly cook red borscht. Today I suggest you make sorrel soup with mashed potatoes and spinach. Very tasty and satisfying soup, despite the fact that it is prepared without meat.
For the soup, prepare all the necessary ingredients according to the list. Pre-boil the eggs.
Cut the onion into cubes and the carrots into slices.
Cut potatoes into cubes, add water and put on fire.
Heat sunflower oil in a frying pan, put onions and carrots and sauté a little.
When the potatoes are boiled, drain the water into a separate saucepan and mash the potatoes in a puree. Then return the water to the pan, mix thoroughly with the puree.
Wash sorrel, spinach and dill under running water. Finely chop all greens.
Add sautéed onion and carrots to the soup, add herbs.
Cut the boiled eggs into cubes, send them after the herbs, salt and pepper the soup to taste.
Cover the soup and let it brew. Pour incredibly delicious sorrel soup with mashed potatoes and spinach into plates, add half an egg and a spoonful of sour cream to each.
