Vegetarian soups are not only loved and prepared by vegetarians. During fasting or for weight loss, these soups are very good for everyone! By using different vegetables, we can get a new taste and aroma every time. Spices and seasonings can also be varied to your liking.

Today I propose to cook a wonderful lean vegetable soup with celery. This is a wonderful plant, it contains many micro and macro elements and vitamins. In cooking, celery root, stems and greens are used. Today we have celery stalks soup.

So, get some vegetables for your soup, spices and some vegetable oil. From the spices, I used paprika and dried chili to give the soup some color and a little spice. I indicated the amount of food based on a 1.5-liter saucepan.

First, peel and chop the onion and carrot. How to cut - at your discretion, I wanted to cut the carrots into circles.

We heat the vegetable oil in a saucepan, heat the spices for literally 1 minute so that they give off their aroma.

We send onions and carrots to the pan, fry them for 3-5 minutes, stirring occasionally.

Peel the potatoes and cut them into cubes. If you cook soup, adhering to a diet, you can skip potatoes and slightly increase the amount of other vegetables. Mix vegetables and keep on fire for 2-3 minutes.

Cut half the pepper into strips, finely chop the cabbage.

Put chopped cabbage with vegetables.

Pour hot water over the vegetables. Due to the spices, the color of the broth is very attractive.

Cover the pot with a lid and bring to a boil over medium heat. In the meantime, let's take care of other vegetables. Make a cross-shaped incision on the tomato and fill it with boiling water to make it easier to remove the skin.

Cut the celery stalks into thin plastics, cutting off the tough bottom.

The soup has boiled, put the celery and pepper. Salt to taste.

Bring the soup to a boil again, send the finely chopped tomato without the skin into it.
