In order to prepare mashed potato soup with celery root, expensive and exotic products are not required. All ingredients are simple and affordable. Unless ordinary milk can be replaced with coconut milk, then the dish will acquire completely different colors.
Thanks to the presence of fresh ginger, the puree soup has a very light, completely unobtrusive pungent note.
From spices to such a soup, nutmeg is perfect, it goes well with potatoes, you can also take a little black pepper, turmeric, asafoetida.
Vegetable weight is indicated in peeled form.
So let's get started. Coarsely chop the peeled carrots and celery root. In the future, vegetables will be pureed, so you don't need to pay much attention to slicing. Peel and grate fresh ginger.
At the bottom of the saucepan in which the puree soup will be cooked, heat the vegetable oil, heat the spices in it just a little and put the prepared carrots, celery and ginger. Stir occasionally, fry the vegetables until lightly blush.
Add peeled potatoes.
Pour boiling water over the food and cook for 20 minutes after boiling.
Then add salt to taste. Pour in milk, bring to a boil, boil for a minute and remove from heat. Grind the cooked vegetables into a delicate puree with the hand blender.
