Vegetable soup with zucchini and white cabbage can be safely called not only healthy and nutritious, but also dietary. In addition, the dish is suitable for vegetarians, we will cook it without using meat. Another great advantage of the soup is its ease of preparation. We will not fry the ingredients - this will simplify our task and make the soup less high-calorie. Of course, such a light dish is best served in the summer, when the heat outside the window discourages appetite, and fresh vegetables are freely available. But personally, nothing prevents me from cooking soup in winter. Moreover, I add red pepper to the broth, and it warms up very much, especially in the cold.
The main ingredients of the soup are zucchini and cabbage, as well as the other vegetables listed. Peas will make the dish more satisfying. You cannot do without spices - they will give the soup a special taste and aroma. I put the spices to my taste, if you wish, you have the right to replace them. And for serving, be sure to prepare fresh dill or other herbs and sour cream (I use soft salted cheese instead). Well, let's get started!
Cut the onion into small cubes.
Cut the carrots into semicircles.
We also cut the potatoes into small cubes.
We send the first batch of vegetables into slightly salted boiling water. Bring to a boil and cook for about 5 minutes.
At this time, we continue cutting vegetables. We chop the cabbage medium-sized.
Cut the bell pepper into small cubes.
We send vegetables next to the pan and continue cooking.
Cut the zucchini into small cubes.
We also cut the tomato.
We immediately transfer the chopped vegetables to the soup and cook for another 5-10 minutes until the vegetables are ready.
Now we send canned peas without liquid to the pan, and also add spices: mint, thyme, bay leaf, red pepper. Salt and pepper the dish if necessary.
Cook for another 5 minutes, then remove from heat and leave for at least 15 minutes.

Important additions to the recipe
Before preparing the soup, I advise you to put a pot of water on the fire to boil in advance and peel all the vegetables. This will simplify the process.
