My household loves meat and chicken soups more, and sometimes I soooo want a simple quick vegetable soup. In short, I cook it for myself for joy, give it to my household and overcome their resistance with the above phrase!

For Vegetable Quinoa Soup, prepare the ingredients listed below. It is very convenient to always keep some frozen vegetables in the freezer, either prepared by you or purchased. I think it is better to buy mixtures by weight or in transparent packages. It is good that the composition contains as many vegetables as possible and, preferably, sweet peppers. In this variation: carrots, green peas, corn, carrots, onions, green beans, zucchini and tomatoes. For me it is also very much in the subject of celery (both root and stem), but the household is actively protesting.
Of course, the soup can also be made with fresh vegetables, but then it will not be so quick to prepare.
Choose the amount of quinoa depending on how thick you prefer the soup. If you take one glass, it will turn out to be very thick.
The quinoa must be rinsed thoroughly. It is convenient to do this in a strainer of a suitable size under cold running water or in a bowl, pouring and pouring water from the grains until it becomes transparent.
Rinse the vegetable mixture with water, discard in a colander. Then defrost and simmer vegetables for about five minutes over medium heat in a frying pan in vegetable oil, lightly salt.
Add quinoa to boiling water and cooked vegetables the next time you boil. Simmer for about 20 minutes. Salt the finished soup to taste, add fresh or dried herbs.
