Ingredients

Pumpkin - 1 kg

Pumpkin puree soups are frequent guests in my house. In my family, these soups are loved by everyone, without exception. As soon as it gets cool outside, soups are our best helpers against the autumn blues. I prefer the lean version of the soup, but if you want, you can add cream to the soup, as well as processed cheese. Recently, I have been constantly preparing puree soup with pumpkin and apples, the combination is incomparable. I add a lot of pepper, we love it so that the pungency is felt well. This soup is very good for maintaining immunity.

To prepare the soup, prepare the necessary products from the list.

Peel carrots, onions, garlic and apples. The apples should also be cored by cutting them into 4 pieces. Chop onions and carrots coarsely.

Peel the pumpkin and cut into large pieces.

If you have a saucepan with a thick bottom, then you can fry the vegetables directly in it, if not, then fry in a pan, and then transfer to the pan. Pour a little oil on the bottom, heat and lay out the carrots, onions and garlic. Lightly fry the vegetables.

Add pumpkin to the pot, sprinkle with Italian herbs or other spices (like basil or oregano). Lightly fry the pumpkin, shaking the pan.

Place apples and hot pepper slices on top.

Pour hot water from a kettle into a saucepan. I have indicated the approximate amount of water in the ingredients. It should be enough to almost cover the pumpkin, but it all depends on how thick the soup you want to get. Also add salt. Usually I add some of the salt right away, and at the end I taste it and add salt if there is not enough salt.

Cook the soup for about 20 minutes, until the pumpkin is tender.

Puree the soup with a hand blender.

Pour pumpkin soup with apples into pots, sprinkle with pumpkin seeds or croutons on top.
