Nettle soup is best prepared in the spring, when the nettle is still young and tender. And it will not be difficult for us to get this plant, since nettles grow not only in the forest, but also in the garden, in the front garden. We choose a place cleaner and away from the road and cut off fresh shoots on the tops of the plants. In addition to nettle for the soup, we also need 2 raw eggs, vegetables - 4 potatoes, carrots, two onions, as well as a little vegetable oil and salt with spices.

Peel and dice the potatoes.

Put the sliced potatoes in a pot of water and put on fire. When it boils, reduce heat under the pan and cook for 10 minutes.

In the meantime, we clean the onions and carrots and prepare a dressing from them. Rub the carrots on a coarse grater, finely chop the onion.

Transfer the chopped onions and carrots to a pan with heated vegetable oil and sauté over low heat, covered with a lid, stirring for 10 minutes.

While the vegetables are cooking, pour boiling water over the nettle and leave for 10 minutes.

After 10 minutes, put the sautéed onions and carrots in a saucepan to the boiling potatoes.

And wash the steamed nettle thoroughly with cold water.

Finely chop the prepared nettle.

Add chopped nettles to the boiling soup. Cook for 5 minutes.

After 5 minutes, pour lightly beaten eggs into the boiling soup and stir to make egg flakes. Salt the soup and season with spices, cover with a lid and remove from heat after 3 minutes. Let it brew for another 5-10 minutes.

Serve hot spring soup with young nettles with sour cream.
