Ingredients
Bulgur - 2 tbsp
Potatoes - 2 pcs.
Onions - 1 pc.
Carrots - 1 pc.
Radish - 1 pc.
Garlic - 2 cloves
Celery root - 50 g
Champignons - 50 g
Vegetable oil - 30 ml
Water - 1.6 l
Salt, hot pepper - to taste

Low-calorie and at the same time quite satisfying soup with bulgur, mushrooms and root vegetables for vegetarians and those who fast or arrange fasting days. It is brewed for no more than half an hour, combined with various spices and herbs, if desired and a quick diet, it is filled with sour cream.
For frying, choose any type of refined vegetable oil: corn, sunflower, olive, etc.
Take products for making lean soup with bulgur from the list.
First, fry the onion and carrot, chopped in any convenient way, in vegetable oil - 2-3 minutes at high heat.
Add short sticks of spicy root celery and radish, stir and sauté for another minute or a half.
The next minute we soak with oil along with the potatoes - cut the peeled potato tubers larger.
We load bulgur, chopped champignons. After stirring, saturate with oil for the last minute without water.
Fill with drinking water, bring to a boil and cook lean soup with bulgur under a lid with constant boiling for 20-30 minutes. Until the potatoes are soft.
At the very end, season with salt, remove from the stove and pepper, add chopped garlic, leave for 5-10 minutes.
Serve thick lean soup with bulgur, vegetables and mushrooms, complemented with fresh herbs.
