I'm not a big fan of fatty soups, I prefer light soups, low-calorie … and pickle with beans and pickles is just that. It is obtained without any fat or oil at all, but at the same time satisfying and has a very rich taste.
As an option, of course, you can add sour cream to it when serving, but then it will no longer be lean)) But it is delicious both with and without sour cream.
It is best to soak the beans in advance, for example overnight. But if you have not done this, it does not matter, you just need to cook the beans longer. And if you are running out of time, you can use canned beans along with liquid.
I used dry beans that I soaked overnight. That's how it swelled up.
After the beans are swollen, they must be rinsed.
Now put the beans in a saucepan and pour in a liter of water. Cook our beans after boiling over low heat until half cooked. It took me about 30 minutes.
Peel and cut the potatoes and onions as we like.
We put vegetables in the soup and add water, as some of the water evaporated during the boiling of the beans. I poured in 1 liter of water.
Next, clean and grate three carrots.
And also add to the pan. Cook our soup until the potatoes are half cooked.

By the time the potatoes are almost cooked, the beans are also almost cooked. And you can put cucumbers. Cook for another 10-15 minutes.
And at the very end, add spices, garlic and salt. We will definitely try not to oversalt the pickle, which is why we salt it only at the end. Let the soup simmer for 3 minutes, then turn it off and let it brew for 10 minutes.
