Root celery - 400 g
Oatmeal - 2 tablespoons

I am one of those people who love root celery in dishes more than stalked celery. And I also know a lot of people who do not eat celery in any form, literally "do not tolerate it." I can understand them, celery has a specific smell that not everyone likes, it is especially difficult to convince children to eat a dish with healthy celery.
Despite the ambiguous attitude towards him in my family, celery is a frequent guest on our table. So today I propose to cook a simple celery root soup for lunch.
Let's prepare all the ingredients for the soup. If you, like me, will make a lean version of the soup, use vegetable oil. If you want a soup that is fatter and more tasty, use butter and broth.
Peel the onion and cut into small cubes. Remove the stalk and seeds from the bell pepper and cut it into small strips.
In a saucepan or in a saucepan with a thick bottom, heat olive oil or any vegetable oil. Add onion and bell pepper to the saucepan. Fry vegetables, stirring occasionally, for 2-3 minutes, until the onion is transparent.
Peel the root celery and rub on a coarse grater. You can also cut it into cubes, but then the cooking time of the soup will increase slightly. Also rub peeled carrots on a coarse grater.
Add carrots and celery to a saucepan with onions and peppers. Fry vegetables for 3-4 minutes, stirring occasionally.
Now pour water or broth into the saucepan.
Add salt and black pepper to taste. Cooking the soup over low heat for 15 minutes.
Then add oatmeal to the soup. You can use both coarse flakes and instant oatmeal for this recipe.
The celery root soup will give a special flavor to thyme, both dried and fresh leaves. Cook the soup for another 5-7 minutes, until the oatmeal is cooked and the soup thickens, then remove the stewpan with the soup from the heat.
Serve this aromatic and healthy celery root soup hot with fresh bread.
