Lean beetroot is an ideal dish for the summer heat and for serving on the days of Orthodox fasting.
Ingredients
Boiled potatoes - 1 pc.
Beets - 1 pc.
Fresh cucumber - 1 pc.
Radish - 6 pcs. (small)
Green onions - 3-4 pcs. (6-8 g)
Lemon - 3 wedges
Water - 0.5 l

The classic lean beetroot is cooked mainly in the summer, when cool dishes are in the price. Also, such a cold borscht can be offered to relatives and guests during Orthodox fasting, if they adhere to it. On request, the dish is served with ice or very chilled.
There are two ways to cook beetroot: peel and boil the sliced beets in water; or bake (boil) a vegetable, then peel and combine with chilled boiled water. The second option for creating a dish is closer to me, so I will talk about it in the recipe.
So, it is necessary to boil the beets and potatoes in the skins until tender, for 20-25 minutes, and cool in ice water for another 15-20 minutes. I recommend purchasing elongated beet tubers, not round ones - the latter often turn out to be fodder varieties and they have little valuable burgundy juice, which is extremely necessary in this recipe.
So, get all the ingredients you need ready and let's start cooking!
Peel boiled and chilled potatoes and beets from the skin, rinse in water. Cut the beets into slices, then into cubes and pour the slices into a saucepan or deep bowl. Pour in chilled boiled water. If you wish, you can use mineral water, kvass, etc. Mix everything gently and let it brew for 5-10 minutes so that the beetroot slices transfer their color to the liquid.
Pour some of the liquid with the beetroot chunks into a separate deep bowl (if making one serving). Squeeze the juice from two lemon wedges, and save the third for garnish.
Cut the peeled and washed potato tuber into medium cubes and add to the container.
Rinse the radishes and cut off the tails, cut into rings or half rings, add to the container.
Rinse the surface of the fresh cucumber thoroughly, cut the tails and cut the vegetable into cubes. Pour into the rest of the cuts.
Season with salt and pepper to taste. Rinse the green onions, chop them, and sprinkle the dish on top.
Mix gently and garnish with a lemon slice. Serve or refrigerate.
