Lecho soup is an absolutely elementary soup! I will not say that it is prepared in 5 minutes, but you will not make any other potato soup faster and with less effort. In fact, all that is needed from the cook is to peel, cut and boil the potatoes until tender. And lecho is delicious lecho! - it’s already ready. The soup allows you to make the lecho softer in taste and more liquid in consistency.
And also, if you have absolutely too little lecho, then you cannot feed three people with such a bowl. But here you can make 2-3 small portions of lecho soup.
The recipe I have given is a lean recipe for lax days. If you do not adhere to any diets, then lecho soup can be enriched by adding small meatballs or fish pieces to it at the beginning of cooking potatoes.
First of all, we set the water to boil. And in the meantime, we clean and finely chop the potatoes.
Cook the potatoes until tender. Since it has been finely chopped, it should be done in 15-20 minutes.
We cut greens in between, if fresh.
I like slightly crushed potatoes in these soups. This can be done with a fork or with a potato crush.
Well, when the potatoes are boiled and they are poured, add lecho, herbs, as well as salt and pepper.
If you need a very hot soup, then it is worth returning it to the fire for a couple of minutes, because the lecho will slightly cool it.
