The secret ingredient that gave the Jerusalem artichoke soup this unmatched taste, from which we were moaning with delight in two voices, is almond milk. Before, I usually did it with cream - it was fine, but not to say gorgeous. More interesting than just potato cream soup, but really nothing special. And today my cream was suddenly in short supply, but there was still half a packet of almond milk. And in this regard, I figured out how to make Jerusalem artichoke puree soup without cream, i.e. lean and vegan. And it turned out so cool that now I will cook it this way and that way! I also plan to try to combine almonds with Jerusalem artichoke in some other dish: I suspected that they were made for each other.
We clean and somehow cut the Jerusalem artichoke.
Peel and cut potatoes into small pieces.
Lightly fry the potatoes with Jerusalem artichoke in a little vegetable oil.
